This is the recipe that inspired me to start my video-making journey, but this is the second time I recorded it because I actually don’t like how my first video and pictures came out. And if you have watched my first video of this Honey Cake recipe I’m sorry for the poor quality video, I got better at using my camera and got more comfortable with it. Plus, I got the courage to talk in this video, which is a first for me, even though it took me almost 4 hours of trying to record my voice, but after all that time I finished making the video 🤣. Hope you guys like it.
About This Honey Cake
Texture: The cookie itself is very hard and crunchy once it comes out of the oven and cools down, but it becomes soft when layered in between the sour cream frosting. This cake is almost like a tiramisu.
Flavor: The taste of the cookie layer is almost like a caramelly flavor, almost like a lotus Biscoff cookie males the perfect combination with the sour cream frosting which is a little tangy and not too sweet.
Time: This cake is a little time-consuming but not too much, but trust me you will impress anyone with this Honey Cake recipe.
Useful Tip: You can shape this cake to however you want it, round, squared, heart, or anything else. You can even make them mini. I made mini Honey cakes for a tea party and they were super cute.
Step-by-step Recipe:
In a saucepan, add the sugar, eggs, honey, and butter. And mix well before turning on the heat.
Add the teaspoon of baking soda and mix, mix, mix.
You'll notice that the mixture becomes bubbly or foamy, turn off the heat after 1 minute.
Add your flour and try to mix as much as you can with the spatula, but then you'll have to transfer and continue by hand.
After the dough has come together cut into 7 equal pieces, you can use a scale if you have one if not it's ok.
Roll and flatten each piece of dough. Then cut with a 24 cm round cutter, or you can use a plate for reference and cut with a knife.
Bake in a preheated oven, for around 10 to 15 minutes or until it's dark golden brown.
In a food processor ad the extra pieces, chop until it becomes a fine crumb (this is for the sides of the cake at the end)
Make the Sour cream frosting by whipping the heavy cream, sour cream, and honey.
Then assemble the cake starting a cookie layer, then cream, then cookie, etc.
Add the crumbs to the sides of the cake.
Decorate with berries and take a picture so you can show everyone :)

Honey Cake Recipe

Ingredient
1 cup of Sugar
2 eggs
2 tablespoons of Honey
2 tablespoons of Butter
1 teaspoon of Baking Soda
3 cups of Flour
1 1/2 cups of Heavy Cream
1 1/2 cups of Sour Cream
2-3 tablespoons of Honey
Instructions
Making the Cookie Layer:
In a saucepan, add the sugar, eggs, honey, and butter.
Mix well, then turn on the fire. Cook this until the sugar dissolves, do not stop mixing so because it burns quickly.
Once the sugar has melted add the baking soda, you will notice that it will bubble up keep mixing this for 1 minute then turn off the fire.
Add the flour and mix as much as you can.
Transfer to a surface so you can continue mixing by hand, be careful it might still be very hot. But it's best to work with dough while warm
Once your dough has come together you can weigh it and cut it into 6 to 8 equal pieces. (check tips below to get more ideas)
Roll and flatten each dough piece and cut to the desired shape. Do not throw away the extras, bake them we will use them to decorate.
Bake these for around 10 to 15 minutes (maybe a little more), they should be dark golden brown.
Once they come out of the oven if your baking sheet isn't flat make sure to move your cookies to somewhere flat (like the countertop or table), because once they cool they will harden and you want a straight cake.
The extra pieces that you baked, once cooled place in the food processor until powder-like.
Sour Cream Frosting:
Whip the heavy cream, sour cream, and honey until well mixed (that's it 😂)
Tips:
You can shape your cookies to any shape you'd like, the traditional one being the round I use a 24 cm. round cutter. Or you can make a square one which I also used once to cut rectangles. Or you can even make Mini cakes which I did once for a tea party, or you can shape to anything else.
When making the sour cream do not put more than 2 tablespoons even if you think it's not sweet enough because the sweetness of the cookie layers will be enough.
