Melt in Your Mouth Butter Cookies

These Butter Cookies are so easy but they will literally melt in your mouth. I filled them with Cookie Butter and Nutella , covered them with Belgium Chocolate and Decorated with Nuts and grated Coconut

These butter cookies are delicate, crunchy and perfect for special occasions. Here in Egypt these are made twice a year on the Muslim celebration of Eid. You will find these beautiful butter cookies in every corner and offered by every housewife. Making them are just as much fun as eating them. Get the little ones to help out and make it a family tradition to do every year.


Since I learned this recipe it has been a family tradition of ours to make them with the girls every Eid. I make 6 batches of these cookies, next to other types of cookies like Italian Biscotti and Chocolate Chip Cookies are a must for my husband and girls.


Here in Egypt we love to fill them but they are delicious all by themselves. The traditional ones here in Egypt are filled with Jam and dipped in shredded coconut, but now everyone is upgrading and making these gourmet ones and filling them with Nutella (my fav!) Lotus Biscoff or some other fancy filling. I personally love anything that you can fill with Nutella and Biscoff.



A Little About These Cookies:


  • Texture: These Butter cookies are light crispy cookies, they are not dense or heavy cookies, they literally melt in your mouth. With a light crunchy covering of milk chocolate and a filling of Nutella, simply delicious.

  • Flavor: As the title states, these cookies taste light and buttery. The cookie dough itself isn't sweet because of the little amount of powdered sugar added to it but when you add the filling and the chocolate give it the perfect sweetness.

  • Important: Make sure to cream the butter and powdered sugar very very well so it will fill up with lots of air making the cookies very light, especially because these cookies do not have any leavening agent.



Step by Step Directions

  1. Cream your butter and powdered sugar. You need to cream this for at least 5 minutes, the butter should look white after you mix them.

  2. This is how white your whipped butter should look. This will fill the butter with air making the butter super light.

  3. Add the egg and vanilla.

  4. Mix until well incorporated.

5. Add the flour and a pinch of salt.

6. Mix just until incorporated, do NOT over mix. Put the dough in the fridge for 5 minutes before using.

7. If you are using a cookie press, press and hold for 2 seconds before lifting

8. Bake these in a preheated oven, for 10 to 15 minutes or until golden brown at the bottom.


Make these with a piping bag if you do not have a cookie press as shown below.

9. You can fill your Butter cookies with Biscoff Cookie spread, Nutella, Dulce de leche, Jam, or anything else you can come up with.

10. Dip in Chocolate (my favorite is Belgium chocolate) Dark or milk chocolate.

11. Enjoy with a cup of coffee!
